5 egg yolks
1/2 cup sugar
1 tablespoon vanilla extract

Preheat oven to 300 degrees.
Butter 4 individual ramekins.
Whisk together the cream, egg yolks, sugar and vanilla. Mix until it is creamy.
Pour the mixture into the ramekins.
Place the ramekins in a baking pan. Fill the pan with hot water until the water is half-way up the sides of the ramekins.
Bake for 45 - 60 minutes. It is done when the custard is set.
Remove the ramekins from the baking pan and let cool for 15 minutes. Place in refrigerator until cold.
Sprinkle sugar on top of the custard. Use a kitchen torch to burn the sugar into a crispy topping.
