Pizza Dough

2 1/2 cups warm water
1/4 cup sugar
3 teaspoons instant yeast
1/4 cup vegetable oil
6 cups all-purpose flour
2 teaspoons salt

In the bowl of a stand mixer, combine the water, sugar and yeast. Let the mixture sit until frothy. Add in the vegetable oil.
Combine the flour and salt then add to the yeast mixture - 1/2 cup at a time, mixing well between additions. Continue adding the flour until the dough can be pulled away from the sides of the bowl. The dough should still be sticky.
Grease a large bowl, the scrape the dough into the bowl. Turn the dough to coat with the oil in the bowl. Cover the bowl with plastic wrap or a towel and let the dough rise at room temperature until doubled in side. (About 1 hour.)
Turn the dough out onto a well-floured work surface. Pull the dough around to the bottom, stretching to create a smooth ball. Cut the dough into 3 equal portions. Each piece will be about 1 pound of dough.
Roll out he dough to use for your favorite pizza recipe or refrigerate until needed. (Up to 24 hours.) Keep in mind that the dough will continue to rise.
To bake: Preheat oven to 475 degrees, prepare pizza with desired toppings and bake until the crust is golden brown, approximately 8 - 10 minutes.

- This is a large batch of dough. I freeze 2 of the balls of dough in separate Ziploc freezer bags for future use. For us, one ball of dough makes 2 large thin-crust pizzas.
