Peanut Butter Cookies

3/4 cup peanut butter 
1/2 cup shortening
1-1/4 cup packed light brown sugar
3 tbsp. milk
1 tbsp. vanilla
1 egg
1-3/4 cup flour
3/4 tsp. salt

3/4 tsp. baking soda

Heat oven to 375°. Combine peanut butter, shortening, brown sugar, milk, and vanilla in a large bowl. Beat at medium speed until well blended. Add egg, beat just until blended. Combine flour, salt, and baking soda. Add to creamed mixture at low speed. Roll into 1-inch balls and place on ungreased cookie sheet. Press press with fork. Bake 7 - 8 minutes or until set. Cool 2 minutes before removing from pan. Cool on a wire rack.
