Bruschetta

4 roma tomatoes, diced
1 bunch green onions, sliced
2 cloves garlic, minced
2 tablespoons Penzey's Italian Herb Mix
1/2 teaspoon sugar
1/2 cup olive oil
1 loaf French bread, sliced and toasted
1/2 cup Parmesan cheese


Combine the tomatoes, onions, and garlic. Add the spices and sugar. Set aside. Toast the sliced French bread. Spoon the tomato mixture generously on top of the bread. Sprinkle with Parmesan cheese. Serve immediately.
