Grandma Margie's Carrot Cake

Cake

2 cups flour
2 teaspoons baking soda
1 teaspoon salt
3 teaspoons cinnamon
2 cups sugar
4 eggs
1 1/2 cups canola oil
2 teaspoons vanilla
3 cups grated carrots


Sift together flour, baking soda, salt, and cinnamon. Cream sugar and eggs, and mix in oil.  Add the flour mixture and blend well. Stir in the vanilla and then the carrots. Grease and flour a 13 x 9 cake pan. Bake at 350 for 35 to 40 minutes. Cool completely.

Frosting

8 oz. package cream cheese, softened
1 lb. powdered sugar
1 tablespoon vanilla
1 tablespoon milk


Blend until creamy.
