2 lbs. carrots cut diagonally into 2-3 inch pieces
5 tbsp. butter
4 garlic cloves, minced
2 tbsp. honey
1/4 tsp. salt
1/4 tsp. pepper
chopped fresh parsley for garnish
Preheat oven to 425 degrees. Grease rimmed baking sheet with cooking spray.
Melt butter. Add garlic and cook for 2-3 minutes until lightly browned. Remove from heat and stir in the honey.
In a mixing bowl, toss the carrots with the butter mixture. Season with salt and pepper. Transfer to baking sheet making sure carrots are in one layer. Bake for 20-25 minutes, until carrots are browned and tender.
Transfer to a serving plate and sprinkle with parsley.
